Ingredients
Phyllo Cups
- Phyllo Dough sheets (quantity depends on number of cups)
- Olive Oil for brushing
Filling
- Brie (plant-based), cut into small cubes or thin slices
- Fresh Blackberries, 2-3 per cup
- Fresh Thyme leaves, for sprinkling
Finishing Touch
- Honey (natural) or maple syrup (natural) for drizzling (optional)
Instructions
- Prepare the Phyllo Cups: Preheat the oven to 350°F (175°C). Carefully unroll the phyllo dough and keep it covered with a damp towel to prevent drying. Layer three sheets of phyllo on top of each other, brushing each sheet lightly with olive oil to create a crisp and golden cup when baked. Gently press these layered sheets into a mini muffin tin to form individual cups.
- Add the Brie (plant-based) Filling: Cut the Brie (plant-based) into small cubes or thin slices that fit perfectly inside the phyllo cups. Place one piece into each cup to soften slightly during baking.
- Top with Blackberries and Thyme: Place 2-3 fresh blackberries gently on top of the Brie (plant-based) in each cup. Sprinkle a few fresh thyme leaves over the fruit to add aromatic flavor.
- Bake Until Golden and Melty: Bake the phyllo cups for 12-15 minutes or until the phyllo is golden brown and crisp and the Brie (plant-based) has softened and started to melt. Watch closely to prevent burning.
- Finish with a Honey (natural) Drizzle: Remove the cups from the oven and let them cool for a couple of minutes. Drizzle with a little honey (natural) or your preferred syrup before serving for a subtle sweet balance.
Notes
- Keep phyllo sheets covered with a damp cloth to prevent drying while assembling.
- Brush olive oil generously between phyllo layers for a golden, flaky texture.
- Use ripe, fresh blackberries for the best flavor contrast.
- Avoid overfilling the cups to prevent sogginess during baking.
- Serve the cups warm to enjoy the creamy texture of melted Brie (plant-based).
