Instructions

  1. Prepare the Blueberry Swirl: Gently cook fresh blueberries with honey or maple syrup and lemon juice in a small saucepan over low heat, stirring occasionally until the fruit softens and releases juices forming a luscious sauce. Remove from heat and let cool.
  2. Mix the Yogurt Base: In a separate bowl, combine plant-based yogurt with vanilla extract and natural gelling agent. Stir carefully until smooth and well blended, ensuring the yogurt sets properly when frozen.
  3. Combine and Swirl: Layer the yogurt mixture and cooled blueberry sauce into silicone molds or ice cube trays. Use a toothpick or skewer to gently swirl the two mixtures together, creating beautiful patterns without fully mixing.
  4. Freeze Until Set: Place molds in the freezer for at least 3-4 hours or until completely firm. Once set, pop out the bites and store them in an airtight container, ready to enjoy anytime.
