Instructions

  1. Prepare the seasoned beef and turkey bacon mixture: Heat a large skillet over medium heat. Cook the chopped smoked turkey bacon until crispy and set aside. In the same skillet, sauté diced onions and minced garlic until aromatic. Add ground beef and cook thoroughly, breaking it into crumbles as it browns. Stir in cumin, chili powder, paprika, and vegetarian Worcestershire sauce (natural). Cook for a few more minutes until well combined and fragrant.
  2. Mix in bell peppers and enchilada sauce: Add diced bell peppers to the skillet and let them soften slightly. Pour in the enchilada sauce (natural) and stir gently until the peppers are cooked but still slightly crunchy. This mixture will be the filling for the enchiladas.
  3. Assemble the skillet enchiladas: Lower the heat and spread a thin layer of the beef mixture on the bottom of the skillet. Place tortillas one at a time over the mixture, adding more beef mixture on top of each tortilla. Sprinkle shredded plant-based cheese generously and continue layering until all tortillas and beef mixture are used.
  4. Cook until cheesy and bubbly: Cover the skillet with a lid and cook on low heat for about 10 minutes. This allows the plant-based cheese to melt perfectly and the flavors to meld together beautifully.
