Description

This Beef Enchiladas recipe delivers a comforting and flavorful dinner with tender seasoned beef, rich spices, plant-based melted cheese, and a vibrant natural sauce wrapped in soft flour tortillas. Easy and quick to prepare, it offers a satisfying meal perfect for weeknights and customizable to your taste preferences.

Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic (natural), minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp vegetarian Worcestershire sauce
  • 2 tbsp tomato paste (natural)
  • 2 tbsp grape juice

Enchilada Sauce

  • 2 cups vegetable broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp natural gelling agent

Assembly

  • 8 soft flour tortillas
  • 1 1/2 cups cheese (plant-based), shredded
  • 2 green onions, sliced

Instructions

  1. Prepare the Beef Filling: Heat a pan over medium heat and cook the ground beef until browned and crumbly. Add diced onions and minced garlic (natural), sautéing until softened and fragrant. Stir in chili powder, cumin, vegetarian Worcestershire sauce, tomato paste (natural), and a splash of grape juice. Mix well and cook for a few minutes to combine flavors.
  2. Make the Enchilada Sauce: In a saucepan, combine vegetable broth, chili powder, cumin, and natural gelling agent. Whisk thoroughly and simmer until the sauce thickens slightly and coats the back of a spoon.
  3. Assemble the Enchiladas: Preheat the oven to 375°F (190°C). Quickly dip each tortilla into the warm sauce to soften. Place a generous spoonful of the beef filling down the center of each tortilla, then roll it up and place them seam-side down in a baking dish. Repeat with all tortillas.
  4. Top and Bake: Pour the remaining sauce evenly over the rolled tortillas. Sprinkle the shredded cheese (plant-based) generously on top. Bake uncovered for 20-25 minutes until the cheese melts and the sauce is bubbly around the edges.
  5. Rest and Serve: Let the enchiladas sit for 5-10 minutes after baking to set flavors. Garnish with sliced green onions and serve with preferred sides.

Notes

  • Warm the tortillas before filling to prevent cracking while rolling.
  • Do not overfill tortillas to keep enchiladas neat and easy to handle.
  • Be generous with the sauce to ensure moist and tender enchiladas.
  • Allow the dish to rest before serving for optimal flavor and texture.
  • Adjust chili powder and spices to suit your preferred spice level.
